Quick rocket and salmon pizzas

Simple, easy and just a little bit fancy, this quick rocket and salmon pizza recipe is perfect to whip up for weekend drinks and weeknight dinners alike

  • 2 large thin pizza bases
  • 50 gram sachet pizza sauce
  • 1/4 cup basil pesto
  • 2 cup grated mozzarella
  • 1 red onion, peeled and finely sliced
  • 100 gram cold smoked salmon slices
  • 2 cup Krispkut Mediterranean Wild Rocket
  • 2 tablespoon capers

    Preheat the oven to 220˚C. Place the pizza bases on an oven tray lined with baking paper. Combine the pizza sauce and pesto and spread half onto each pizza base. Top the sauce with the mozzarella and onion.

    Bake the pizzas in the preheated oven for 10-15 minutes, or until the bases are crisp and golden and the cheese is bubbly. Top the pizzas with the salmon, rocket and capers before serving them.
