Quick marmalade delicious puddings
Classic lemon delicious gets a citrusy twist in this easy marmalade delicious pudding recipe. Served in individual ramekins, these puds are sure to go down a treat at your next sweet event

Ingredients
- 60 gram butter, softened
- 1 cup caster sugar
- 1/4 cup self-raising flour
- finely grated zest of 2 oranges
- 2/3 cup milk
- 1/2 cup orange juice
- 1/4 cup orange marmalade, plus extra to serve
- 3 eggs, separated
- icing sugar, ice cream to serve
Method
- 1Preheat oven to moderate, 180°C. Lightly grease 6 x 1-cup ramekins.
- 2In a medium bowl, using an electric mixer, beat butter and ¾ cup sugar together until combined. Mix flour and zest through.
- 3In a jug, combine milk, juice, marmalade and egg yolks. Fold into creamed mixture.
- 4In a clean medium bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually beat in remaining sugar until dissolved and glossy. Gently fold into creamed mixture. Pour evenly among ramekins.
- 5Place ramekins in a large baking dish. Pour in enough hot water to come halfway up the sides of ramekins.
- 6Bake for 20-25 minutes until just firm. Top with a dollop of extra marmalade.
- 7Dust with icing sugar and serve with ice cream.
