Method

Quick gazpacho with celery salsa

1.Process capsicum, tomato, cucumber, garlic, bread, oil and vinegar until smooth. Season. Cover with plastic food wrap; chill for 1 hour.
2.Meanwhile, to make Celery Salsa, combine extra tomato, celery, onion, coriander and Tabasco in a small bowl. Place 4 glass serving bowls in the fridge to chill.
3.Ladle gazpacho into chilled bowls. Top with Celery Salsa. Serve drizzled with extra oil.

You can make this dish a day ahead. Cover with plastic food wrap, then refrigerate.
