Quiche lorraine
The original and classic quiche lorraine with ham and cheese is perfect for parties, lunchboxes or dinners.

Ingredients
Quiche lorraine
- 4 sheets filo pastry, halved
- cooking oil spray
- 1 onion, sliced
- 100 gram low-fat shaved ham, roughly chopped
- 1 cup (250ml) low-fat milk
- 3/4 cup (180ml) light evaporated milk
- 4 eggs
- 1/2 cup (60g) grated low-fat tasty cheese
Method
Quiche lorraine
- 1Preheat oven to 180°C. Lightly spray a 23cm quiche pan with oil.
- 2Spray each filo sheet with oil. Place in quiche pan, overlapping pastry to cover base and sides completely. Bake for 10 minutes.
- 3Heat a frying pan on high. Spray with oil and saute onion 1-2 minutes. Add ham and cook for 2 minutes. Spread over pastry.
- 4In a bowl, whisk together milk, evaporated milk and eggs. Pour into prepared pan. Top with cheese.
- 5Bake for 30-35 minutes, until firm.
Notes
Chop fresh herbs and mix through egg mixture before baking.
