Ingredients
Pumpkin spice loaf
- 350 gram peeled pumpkin, chopped (or 1/4 cup leftover mash)
- 90 gram softened butter
- 3/4 cup brown sugar
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 2 eggs
- 1/2 cup self-raising flour
- 1/4 teaspoon bicarbonate soda
- 1/2 cup raisins
- butter, to serve
Crumble
- 1/4 cup plain flour
- 1/4 cup brown sugar
- 30 gram chopped chilled butter
- 1 tablespoon pumpkin seeds
Method
Pumpkin spice loaf
- 1Preheat oven to 180°C. Lightly grease and line a 10cm x 22cm loaf pan with baking paper.
- 2Place pumpkin in a bowl with 1 tablespoon water. Cover with plastic wrap and microwave on high (100% power) 5 minutes, until tender. Drain. Mash until smooth. Cool.
- 3In another bowl, using electric mixer, beat butter, sugar and spices together until pale and creamy. Add eggs one at a time, beating well after each addition. Stir in combined sifted flour and soda, pumpkin and raisins. Spoon into pan. Smooth top.
- 4To make crumble, combine flour and sugar in a bowl. Rub in butter. Stir in seeds. Sprinkle over batter.
- 5Bake 50-55 minutes, until cooked when tested. Cool in pan 10 minutes before turning onto a wire rack to cool completely. Serve warm with butter.
