Pulled chicken and mango salsa topped pita bread tacos
It doesn't get much easier than this! Pull leftover chicken out of the fridge, pita bread out of the pantry and create a colourful, filling 'taco' the whole family will love for lunch or dinner

Ingredients
Mango salsa
- 1/2 fresh mango, skin removed, finely diced (fresh peaches or nectarines would also be delicious)
- 1 cup cherry tomatoes, cut into quarters
- 1/2 cup sliced pickled jalapeños
Chicken pitas
- 4 tablespoon sour cream
- 2 pita breads or Lebanese breads
- cheddar cheese, sliced very thinly or grated
- fresh coriander leaves
- 3/4 cup cooked chicken, pulled into even-sized pieces
- ground chilli, to season (optional)
Method
- 1Combine all mango salsa ingredients in a medium bowl and lightly toss.
- 2Spread sour cream across half the pita bread and lay cheese slices across the other half. Add a large handful of coriander leaves, top with a handful of chicken and mango salsa, and sprinkle with chilli, if desired.
- 3Fold the pita in half to eat – just like a taco.
Notes
You can substitute canned tuna for the chicken if you wish.
