Ingredients

Prosciutto-wrapped melon
  • 1/2 medium_piece rockmelon (850g)
  • 12 slice (180g) prosciutto
Vinaigrette
  • 1 tablespoon red wine vinegar
  • 1/4 cup (60ml) olive oil
  • 1/2 clove garlic, crushed
  • 1/4 teaspoon sugar
  • 1 teaspoon flat-leaf parsley, fresh, finely chopped
  • 1 teaspoon oregano, fresh, finely chopped

Method

Prosciutto-wrapped melon with vinaigrette

    Peel and seed rockmelon; cut into 12 slices. Wrap a slice of prosciutto around each rockmelon slice.

    Combine remaining ingredients in screw- top jar; shake well.

    Drizzle vinaigrette over rockmelon; serve with mesclun, if desired.
