Prawn-topped pea fritters

Method

1.Thaw prawns in the fridge and keep chilled until ready to serve.
2.To make fritters, place flour, egg and buttermilk in a bowl. Season with salt and pepper. Whisk until smooth, then stir in onion and peas.
3.Spray a large nonstick frying pan with oil and heat to medium-high. Spoon 2 teaspoons of mixture per fritter into the pan, cooking 6 fritters at a time. Cook for 2 minutes on each side or until golden brown and cooked through. Repeat to make 24 in total. Place fritters on a serving platter.
4.Combine sour cream, zest and dill in a bowl. Top each fritter with a teaspoon of sour cream mixture and a prawn. Season with salt and pepper, then garnish with dill.
  • If peas are not your favourite, then sweetcorn kernels can be used instead in the fritters.
