Prawn saganaki

This enticing prawn pasta dish will only take 20 minutes out of your day and is packed with delicious ingredients like rich tomato sauce and crumbly feta.

Method

1.Cook pasta in a large saucepan of boiling, salted water for 8-10 minutes, until tender. Drain well.
2.Meanwhile, heat oil in a large frying pan on high. Saute onion and garlic for 2-3 minutes, until tender. Add green prawns and lemon rind. Cook for 1-2 minutes, until prawns change colour.
3.Add tomatoes, stock, wine and sugar. Bring to boil. Reduce heat and simmer, stirring, 3-4 minutes until slightly thickened.
4.Return pasta to pan. Toss well. Top with fetta and oregano. Serve with crusty bread.
