Prawn cocktails
Juicy prawns with a dressing instead of mayo - it never fails to please.

Ingredients
Prawn cocktails
- 400 gram cooked prawns, peeled, deveined, tails on
- 1/4 watermelon, peeled, chopped
- 1/4 honeydew melon, peeled, seeded, chopped
- 100 gram crumbled feta
- 1/2 red onion, thinly sliced
- 1/2 bunch mint, leaves picked
Dressing
- 1/4 cup olive oil
- 2 tablespoon red-wine vinegar
- 1 teaspoon dijon mustard
Method
Prawn cocktails
- 1In a large bowl, combine prawns, melons, feta, onion and mint.
- 2In a jug, whisk oil vinegar and mustard together. Season to taste.
- 3Layer salad ingredients among 4 serving glasses or bowls. Drizzle dressing over salads just before serving. Serve with forks.
