Method

1.Place the prawns, mozzarella, lime zest, coriander, chilli and chives in a bowl and stir to combine. Season with salt and pepper.
2.Place a frying pan or char-grill plate over medium heat. Place a tortilla into the dry frying pan or char-grill and top with the prawn filling. Top with the other tortilla.
3.Cook for 2 minutes per side until the tortilla is golden and the cheese has melted. Serve with salsa, sour cream and the lime quarter.
