Prawn and peach skewers

Ingredients
Prawn and peach skewers
- 1 kilogram green prawns, peeled, deveined, tails intact
- zest and juice of 1 lemon
- zest and juice of 1 lime
- 1 tablespoon olive oil
- 2 clove garlic, crushed
- 2 teaspoon honey
- 1 teaspoon cracked black pepper
- 6 peaches, cheeks removed and halved
- 6 green onions (shallots), cut into 4cm pieces
- 8 bamboo skewers, soaked (to avoid burning)
Method
Prawn and peach skewers
- 1Combine zest, juice, oil, garlic, honey and pepper. Pour over prawns, turning to coat. Allow to marinate for at least 10 minutes.
- 2Thread prawns, peach pieces and onions alternately onto skewers. Preheat barbecue or char-grill on medium.
- 3Barbecue 3-5 minutes each side, until cooked through. Serve immediately.
