Prawn and peach skewers

Ingredients

Prawn and peach skewers
  • 1 kilogram green prawns, peeled, deveined, tails intact
  • zest and juice of 1 lemon
  • zest and juice of 1 lime
  • 1 tablespoon olive oil
  • 2 clove garlic, crushed
  • 2 teaspoon honey
  • 1 teaspoon cracked black pepper
  • 6 peaches, cheeks removed and halved
  • 6 green onions (shallots), cut into 4cm pieces
  • 8 bamboo skewers, soaked (to avoid burning)

Method

Prawn and peach skewers
  • 1
    Combine zest, juice, oil, garlic, honey and pepper. Pour over prawns, turning to coat. Allow to marinate for at least 10 minutes.

    Thread prawns, peach pieces and onions alternately onto skewers. Preheat barbecue or char-grill on medium.

    Barbecue 3-5 minutes each side, until cooked through. Serve immediately.
