Creaming prawn and macaroni salad
- 300 gram macaroni
- 300 gram small cooked peeled prawns
- 1 red capsicum, finely chopped
- 2 celery sticks, thinly sliced
- 2 green onions, thinly sliced diagonally
- 1/4 cup chopped dill
- 1/2 cup light sour cream
- 1/3 cup mayonnaise
- 2 teaspoon grated lemon zest, plus 1 teaspoon extra
- 2 tablespoon lemon juice
- few drops red tabasco sauce
- 1/4 cup fried shallots
Method
Creamy prawn and macaroni salad
- 1Cook pasta in a large saucepan of boiling salted water for 10 minutes or until tender. Drain; refresh under cold running water.
- 2Combine pasta, prawns, capsicum,celery, onion and dill in a large bowl. Whisk sour cream, mayonnaise, zest, juice and Tabasco in a small bowl. Season.
- 3Add cream mixture to pasta mixture; mix well. Spoon onto a serving platter. Serve sprinkled with extra zest and fried shallots.
