Potatoes with bacon

You’ve got to try this potato recipe! I’ve gone all Swedish on it with gherkins and sour cream, but you can load up the top with anything really.

Method

1.Preheat oven to 230°C. Line a tray with baking paper.
2.Drizzle some olive oil on the baking paper and spread the potatoes out into a thin layer. Add the bacon, salt, pepper and another drizzle of olive oil.
3.Bake for 25 minutes or until the potatoes are cooked to crispy around the edges and the middles ones just cooked.
4.Sprinkle with the gherkins, chopped chives and a dollop of sour cream.
5.Eat hot, warm or cold, for breakfast, lunch or dinner!

Try topping with hot-smoked salmon and dill or basil for a change.
