Potato waffle big breakfast

Golden potato waffles with smoked salmon and poached eggs

Ingredients

  • 567 gram packet frozen Birds Eye Potato Waffles
  • 4 asparagus spears
  • oil spray
  • 2 eggs
  • 2 slices smoked salmon
  • feta, for crumbling
  • chives, for garnish

Method

    Remove 2 frozen Birds Eye Potato Waffles and place on a baking paper lined tray. Bake in a preheated oven at 220°C for 10 minutes. Turn over waffles and place asparagus on the same tray. Spray with oil and bake for a further 10 minutes.

    Meanwhile, poach eggs for 2-3 minutes or until done to your liking.

    Assemble breakfast by placing smoked salmon, asparagus and poached eggs on top of potato waffles. Crumble over feta and garnish with chives. Serve with cracked black pepper if desired.
