Potato skins

Potato skins are tasty additions to any party table. Add salsa for extra crunch.

Potato skins
  • 5 potatoes, scrubbed
  • 1/4 cup oil
  • 1/4 cup grated cheese
  • 300 millilitre tub sour cream
  • 1/4 cup sweet chilli sauce
  • 1 avocado, finely chopped
  • 1/3 cup roasted red capsicum, drained, finely chopped
  • 1 green onion, finely sliced
  • 1 lime, juiced

    Preheat oven to 200°C. Line a baking dish with foil.

    Cut potatoes into wedges. Using the tip of a knife, slice potato away from flesh, leaving a little potato on skin.

    Combine skins and oil in bowl. Season to taste.

    Place skin side up on wire rack in a baking dish. Bake 20-25 minutes, until browned and crisp. Turn over and sprinkle with cheese.

    Increase oven to 220°C. Bake skins for a further 4-5 minutes, until cheese melts.

    Combine all salsa ingredients. Mix well. Combine sour cream and chilli sauce in a bowl.

    Serve potato skins with salsa and sour cream mixture for topping and dipping.
