Method

1.Cock potatoes in a saucepan of boiling,salted water for 20-25 minutes, until tender.Drain well. Allow to cool. Remove skin and press through a sieve into a large bowl.
2.Add flour, parmesan and egg, stirring,until combined (add a little extra flour if dough is very soft).
3.Line an oven tray with baking paper. Turn dough onto a lightly floured surface and divide into 4 even portions. Roll each portion into2cm thick sausages, then cut into 2cm pieces.Roll each ball over a floured fork. Place on tray. Chill, until firm.
4.Cook gnocchi in 3 batches in a large pan of simmering water for 2-3 minutes, until they float. Remove with a slotted spoon.
5.BLUE CHEESE SAUCE: Meanwhile,bring cream to a simmer in medium frying pan over low heat. Add cheese and cook for 3-4 minutes, stirring, until cheese melts. Toss gnocchi through sauce and season to taste.
6.Preheat grill to hot. Spoon gnocchi mixture into a 6-cup oven proof dish. Sprinkle with breadcrumbs and place under grill for 5minutes, or until browned. Serve sprinkled with thyme leaves.
