Potato bake with bacon

The ultimate comfort food, this super creamy and cheese potato and bacon bake is delicious enjoyed hot out of the oven on it's own, or as a delicious side to a family dinner spread.

Ingredients

Potato bake with bacon
  • 1.2 kilogram desiree potatoes
  • 200 gram rindless bacon slices, chopped finely
  • 1/4 cup finely chopped fresh chives
  • 1 cup (250ml) pouring cream
  • 3/4 cup (180ml) chicken stock
  • 3/4 cup (90g) coarsely grated cheddar cheese

Method

    Preheat oven to 180°C. Oil 1.5-litre (6-cup) ovenproof dish.

    Using mandolin or V-slicer, cut potatoes into paper-thin slices; pat dry with absorbent paper. Layer a quarter of the potato in dish; top with one-third of the bacon and chives. Continue layering remaining potato, bacon and chives, finishing with potato.

    Heat cream and stock in small saucepan until almost boiling; pour over potatoes. Cover with foil; bake 40 minutes. Uncover; bake 20 minutes. Sprinkle with cheese; bake about 20 minutes or until potato is tender. Stand 10 minutes before serving.
