Potato and pancetta bake

Hot, creamy and utterly delicious, this hearty potato and pancetta bake is beautiful enjoyed straight out of the oven for a tasty family dinner or wonderful side.

Ingredients

Method

1.Preheat oven to 200°C. Grease a 2-litre (8-cup) ovenproof dish.
2.Heat oil in a medium frying pan over medium heat; cook onion and pancetta, stirring, until onion softens and pancetta is crisp
3.Combine cream, sour cream and chives in a jug.
4.Layer a third of the potato slices over base of the dish; sprinkle with half the pancetta mixture. Pour a third of the cream mixture over pancetta mixture; sprinkle with a third of the cheese. Repeat layering, finishing with cheese.
5.Bake 40 minutes or until browned. Stand 10 minutes before serving.
