Method
1.Take puff pastry sheets and cut a 7cm disc from each. Push into a 12-hole muffin tray to make 12 neat nests then chill.
2.Heat cream with sugar, nutmeg and orange peel. Bring to a simmer, then rest for 5 minutes.
3.Whisk eggs then add the flavoured cream. Strain the mixture and pour into the pastry cases, bake for 15-20 minutes at 185ºC, until puffed and golden.
