Portuguese piri piri chicken
- 270 gram bottle piri piri marinade
- 1.4 kilogram butterflied chicken
- 1/3 cup (80ml) vegetable oil
Method
Portuguese piri piri chicken
- 1Preheat oven to 200°C/180°C fan.
- 2Rub ⅓ cup piri piri marinade over both sides of chicken. Heat oil in a large flameproof roasting pan over medium-high heat. Cook chicken, skin-side down, for 5 minutes. Turn chicken over. Transfer pan to oven; roast chicken for 15 minutes or until juices run clear when the thickest part of a thigh is pierced.
- 3Place chicken on a platter. Serve with remaining piri piri marinade, and roasted potatoes and green salad, if you like.
