Pork san choy bow
Chinese hoisin sauce gives this pork mince great flavour balanced with the crisp crunch of iceberg lettuce.

- 1 large iceberg lettuce
- 3 green onions (shallots), finely sliced
- 300 gram pork mince
- 1 tablespoon hoisin sauce, plus extra to serve (optional)
- 1/2 tablespoon soy sauce
- 1 carrot, diced
- 1 celery stalk, diced
Method
Pork san choy bow
- 1Select best lettuce leaves and trim with scissors, if necessary, to make four large cups. Place in a large bowl filled with iced water to crisp.
- 2Spray a wok with cooking oil and heat on high. Stir-fry green onion for 1-2 minutes. Add mince and cook for 5 minutes, until cooked through. Add hoisin sauce, soy sauce, carrot and celery and stir-fry for another 2-3 minutes. Transfer to a bowl.
- 3Arrange lettuce cups on a platter and spoon pork mixture into each. Drizzle with extra hoisin sauce, if using, and serve.
