Pork fillet with lentils and spinach

Ingredients
- 500 gram pork fillet
- 1 tablespoon olive oil
- 1 red capsicum, diced
- 200 gram green beans, trimmed, cut into 2 cm lengths
- 1 garlic clove, finely chopped
- 2 400 g cans lentils, rinsed
- 1 tablespoon soy sauce
- 150 gram baby spinach
Method
- 1Lightly spray a frying pan with cooking oil spray and heat on high. Cook pork for 3-4 minutes, turning, until browned all over. Cover and cook for another 5-7 minutes, until cooked to your liking.
- 2Meanwhile, heat oil in a large saucepan on medium. Cook capsicum, green beans and garlic for 5 minutes, stirring, until soft and starting to colour. Stir in lentils and soy sauce and cook, covered, for 1 minute, until heated through. Stir through spinach until just wilted.
- 3Slice pork thickly and serve on a bed of lentils and spinach.
