Method

1.Lightly spray a frying pan with cooking oil spray and heat on high. Cook pork for 3-4 minutes, turning, until browned all over. Cover and cook for another 5-7 minutes, until cooked to your liking.
2.Meanwhile, heat oil in a large saucepan on medium. Cook capsicum, green beans and garlic for 5 minutes, stirring, until soft and starting to colour. Stir in lentils and soy sauce and cook, covered, for 1 minute, until heated through. Stir through spinach until just wilted.
3.Slice pork thickly and serve on a bed of lentils and spinach.
