Pork fillet with lentils and spinach

Ingredients

  • 500 gram pork fillet
  • 1 tablespoon olive oil
  • 1 red capsicum, diced
  • 200 gram green beans, trimmed, cut into 2 cm lengths
  • 1 garlic clove, finely chopped
  • 2 400 g cans lentils, rinsed
  • 1 tablespoon soy sauce
  • 150 gram baby spinach

Method

    Lightly spray a frying pan with cooking oil spray and heat on high. Cook pork for 3-4 minutes, turning, until browned all over. Cover and cook for another 5-7 minutes, until cooked to your liking.

    Meanwhile, heat oil in a large saucepan on medium. Cook capsicum, green beans and garlic for 5 minutes, stirring, until soft and starting to colour. Stir in lentils and soy sauce and cook, covered, for 1 minute, until heated through. Stir through spinach until just wilted.

    Slice pork thickly and serve on a bed of lentils and spinach.
