Pork and pineapple thai curry
- 410 gram can northern thai curry
- 300 gram pork fillet, thinly sliced
- 1 red onion, cut into wedges
- 225 gram can pineapple pieces in natural juice
- 1 red capsicum, cut into 3cm pieces
- 2 cup broccoli florets, halved
- 1 cup basil leaves
- fresh shanghai noodles, cooked, to serve
Method
Pork and pineapple thai curry
- 1Heat a large saucepan on high. Add thai curry, pork, onion, pineapple with juice, capsicum and broccoli. Bring to the boil. Cover. Boil 5 minutes, until pork and vegetables are tender.
- 2Stir through basil. Serve over noodles.
