Pork and pineapple thai curry

Ingredients

Pork and pineapple thai curry
  • 410 gram can northern thai curry
  • 300 gram pork fillet, thinly sliced
  • 1 red onion, cut into wedges
  • 225 gram can pineapple pieces in natural juice
  • 1 red capsicum, cut into 3cm pieces
  • 2 cup broccoli florets, halved
  • 1 cup basil leaves
  • fresh shanghai noodles, cooked, to serve

Method

Pork and pineapple thai curry

    Heat a large saucepan on high. Add thai curry, pork, onion, pineapple with juice, capsicum and broccoli. Bring to the boil. Cover. Boil 5 minutes, until pork and vegetables are tender.

    Stir through basil. Serve over noodles.
