Ingredients

Pork and peach stir-fry
  • 2 tablespoon vegetable oil
  • 500 gram pork fillet, thinly sliced
  • 2 onions, thinly sliced
  • 1 tablespoon ginger, finely grated
  • 1 clove garlic, crushed
  • 125 gram sugar snap peas, trimmed
  • 2 tablespoon shao hsing wine or dry sherry
  • 2 tablespoon hoisin sauce
  • 415 gram can peach slices, drained
  • fried noodles, to serve

Method

Pork and peach stir-fry

    Heat half oil in a wok or large frying pan on high.

    Stir-fry pork, in 2 batches, 2-3 minutes each batch, until just cooked. Set aside.

    Heat remaining oil in wok; stir-fry onion, ginger and garlic 3-4 minutes.

    Return pork to pan with peas, wine and hoisin sauce; stir-fry 2-3 minutes, until meat is warmed through and sauce has thickened slightly.

    Toss peaches through. Serve stir-fry on a bed of noodles.

Notes

Have all ingredients ready before stir-frying, as it's a very quick process. Vegetables should be tender crisp.
