Ingredients
Pork and mandarin salad
- 2 teaspoon olive oil
- 1 clove garlic, crushed
- 2 teaspoon dijon mustard
- 400 gram pork fillet
- 150 gram baby spinach leaves
Dresslng
- 2 mandarins, peeled, segments halved lengthways
- 1 small red onion, finely sliced
- 1 bunch mint, leaves picked
- 2 tablespoon toasted pine nuts
- 1 mandarin, finely grated zest, 2 tablespoons juice
- 2 tablespoon extra-virgin olive oil
- 1 tablespoon red-wine vinegar
- 1 teaspoon honey
- 1 teaspoon dijon mustard
Method
Pork and mandarin salad
- 1In a small bowl, combine olive oil, garlic and mustard. Rub over pork. Season to taste.
- 2Preheat a char-grill pan on high. Cook pork 8-10 minutes, turning, until well browned and cooked to taste. Transfer to a plate. Rest, covered, for 10 minutes.
- 3In a large salad bowl, combine spinach, mandarin, red onion and mint. Thinly slice pork and toss through.
- 4To make dressing, in a small jug, whisk all ingredients together. Season to taste. Drizzle over salad and sprinkle with pine nuts.
