Pomegranate caipiroska

This tart and tangy caipiroska recipe combines pomegranate and lime to create the ultimate pink summer drink. Be sure to serve with pomegranate seeds for an extra burst of flavour

Pomegranate caipiroska

1.Cut lime half into quarters. Using a muddler, crush two lime wedges in a cocktail shaker with vodka, sugar syrup and pomegranate juice.
2.Add in ice cubes and shake vigorously. Strain mixture into an ice-filled glass, then stir in pomegranate seeds. Garnish with remaining lime pieces.

3.Combine ingredients in a small saucepan over low heat, stirring until sugar dissolves.
4.Bring to the boil, then reduce heat and simmer, uncovered, for 5 minutes. Cool.
5.Store in the refrigerator for up to one month and use to make a margarita, whiskey sour or pomegranate caipiroska. Makes 350ml.
