Method

1.In a large bowl combine the flour, yeast, sugar and salt. Make a well in the centre and add the eggs and vanilla and a dash of the milk.
2.With a whisk or wooden spoon, stir, gradually, incorporating flour from around the outside of the bowl, and adding more of the milk as you go until all the milk and flour are combined in a smooth batter with the consistency of thick cream. Leave to rise until doubled in size and bubbly – about 30 minutes.
3.When the dough has risen, fold in the grated apple and melted butter and mix. Heat the oil in a frying pan and fry large spoonfuls of batter until golden and crispy on each side. Dredge with icing sugar and serve.
  • Use an oil that has a mild flavour, such as canola or sunflower, so the delicate apple flavour isn’t lost. – Ensure milk is warm, not hot. You could serve these with ice cream for a dessert, if preferred.
