Polenta crust pizzas for $2.30 per serve

Ingredients
- 2 1/2 cup water
- 1/2 cup milk
- 1 tablespoon olive oil, plus extra for drizzling
- 1 cup polenta
- 1/3 cup tomato passata
- 6 slice of ham (cut thinly and torn)
- 1/2 cup mozzarella, grated
- basil leaves, to serve
Method
- 1In a medium saucepan, combine water, milk and oil. Bring to boiling point.
- 2Gradually add polenta in a thin steady stream, whisking constantly to combine. Cook 5-6 minutes, stirring, until thick and smooth and adding extra water as required. Season to taste.
- 3Line two 28cm round pizza trays with baking paper. Pour hot polenta evenly onto each, spreading to an even thickness. Chill 30 minutes, until firm.
- 4Preheat oven to moderate, 180C. Bake polenta bases 8-10 minutes.
- 5Spread passata over bases. Top evenly with ham and mozzarella. Season to taste. Bake 10-12 minutes until cheese is bubbling and golden. Scatter with basil leaves to serve.
