Method

1.In a medium saucepan, combine water, milk and oil. Bring to boiling point.
2.Gradually add polenta in a thin steady stream, whisking constantly to combine. Cook 5-6 minutes, stirring, until thick and smooth and adding extra water as required. Season to taste.
3.Line two 28cm round pizza trays with baking paper. Pour hot polenta evenly onto each, spreading to an even thickness. Chill 30 minutes, until firm.
4.Preheat oven to moderate, 180C. Bake polenta bases 8-10 minutes.
5.Spread passata over bases. Top evenly with ham and mozzarella. Season to taste. Bake 10-12 minutes until cheese is bubbling and golden. Scatter with basil leaves to serve.
