Method
1.Place all ingredients, except salmon, in a large stock pot or fish kettle. Cover and bring to the boil.
2.Reduce heat to low. Carefully add salmon to liquid and simmer, 5 minutes.
3.Remove pan from heat and leave salmon to finish cooking in liquid, 10 minutes. Remove salmon from liquid and serve.
Flake salmon into salads or serve with steamed veggies for a light meal, if you like.
