Poached pears with chocolate sauce

An elegant and decadent poached pear dessert laced with cinnamon and vanilla, drizzled with chocolate sauce. Up the level of indulgence by serving with a scoop of ice-cream.

Method

1.Remove core from base of each pear, leaving stalk intact. Peel pears.
2.In a large saucepan, combine ginger beer, 1/2 cup water, sugar and cinnamon over moderate heat. Cook and stir 2-3 minutes or until sugar dissolves. Bring to the boil. Add pears. Reduce heat. Simmer, uncovered, turning occasionally, for 15-20 minutes or until tender. Transfer pears to serving plates.
3.Place chocolate and cream in a medium heatproof bowl over a saucepan of simmering water (don’t let base of bowl touch water). Cook and stir 5 minutes or until melted and smooth. Remove pan from heat.
4.Drizzle hot chocolate sauce over pears. Serve with ice-cream.

You can use apples in this recipe. To make chocolate sauce in the microwave, place chocolate and cream in a medium microwave-safe bowl. Microwave on High (100%), in 30-second bursts, stirring, until melted and smooth. We used Beurre Bosc pears, but you can use any firm variety.
