Poached pear pudding

This poached pear pudding tastes as decadent and indulgent as it looks. A vanilla syrup mixes with the natural sweet flavours of the pears while the pudding is enhanced with notes of ginger.

Method

1.Place water, 1 cup sugar and vanilla in medium saucepan, Stir on medium heat until sugar dissolve.
2.Add pears, ensuring they’re covered with syrup, adding extra water as required. Bring to boil. Reduce heat to low. Simmer, covered, 25-30 minutes, until pears are just tender. Drain. Cool slightly and cut pears in half.
3.Preheat oven to hot, 200°C. Lightly grease an 8-cup baking dish.
4.Sift flour, cocoa, baking powder and ginger into a large bowl. Stir remaining sugar through. Make well in centre, then gradually stir in butter and eggs to form a smooth batter.
5.Pour pudding mixture into dish. Arrange pears in mixture. Bake 25-30 minutes, until just set. Serve warm with vanilla ice-cream.
