Plum torte

This one is a special recipe from 'Love and Food From Gran's Table' by Natalie Oldfield. Nana Rita's plum torte is complete with a crumbly golden crust and beautifully tender juicy plums.

Plum torte
  • 9 tinned black plums
  • 115 gram butter
  • 1/2 cup sugar
  • 2 eggs, separated
  • 1 tablespoon milk
  • 170 gram flour
  • 1 teaspoon baking powder
  • 1/2 cup slivered almonds
  • 1 tablespoon caster sugar, for topping

    Pre-heat oven to 180°C. Grease a torte pan well and set aside.

    Cut plums open; drain on paper towels. Cream butter and sugar together until light and fluffy.

    Beat egg yolks lightly; add in with milk and mix well. Sift flour and baking powder in; fold together.

    Beat egg whites to soft peak; fold in lightly with a knife.

    Spoon batter into torte pan, place plums on top, cut side down. Sprinkle with almonds.

    Bake 55–60 minutes. Sprinkle with caster sugar; serve warm with cream or ice cream.
