  • 6 slices white bread, quartered
  • 2 tablespoon butter
  • 1/4 cup plum jam
  • 2 375 ml cans evaporated milk
  • 3 eggs
  • 1/3 cup caster sugar
  • 1 teaspoon vanilla extract
  • thick cream, to serve

Method

    Preheat oven to moderate, 180°c. Lightly grease a 6-cup ovenproof dish.

    Spread each slice of bread with butter, then jam. Place in prepared dish, slightly overlapping.

    In a bowl, whisk together milk, eggs, sugar and vanilla. Pour over bread. Set aside for 10 minutes until some of the mixture has soaked into the bread.

    Place dish in a large baking pan. Pour in enough boiling water to come halfway up sides of dish.

    Bake for 25-30 minutes until custard is just set when tested. Cool for 5 minutes before serving with thick cream.

Notes

Use any jam of choice for this dish. If liked, replace evaporated milk with half milk and half cream.
