Ingredients
Plum bread and butter pudding
- 6 slices white bread, quartered
- 2 tablespoon butter
- 1/4 cup plum jam
- 2 375 ml cans evaporated milk
- 3 eggs
- 1/3 cup caster sugar
- 1 teaspoon vanilla extract
- thick cream, to serve
Method
Plum bread and butter pudding
- 1Preheat oven to moderate, 180°c. Lightly grease a 6-cup ovenproof dish.
- 2Spread each slice of bread with butter, then jam. Place in prepared dish, slightly overlapping.
- 3In a bowl, whisk together milk, eggs, sugar and vanilla. Pour over bread. Set aside for 10 minutes until some of the mixture has soaked into the bread.
- 4Place dish in a large baking pan. Pour in enough boiling water to come halfway up sides of dish.
- 5Bake for 25-30 minutes until custard is just set when tested. Cool for 5 minutes before serving with thick cream.
Notes
Use any jam of choice for this dish. If liked, replace evaporated milk with half milk and half cream.
