Piri piri chicken tacos with barbecued sweet corn

For a delicious summer dinner the whole family will love, try this piri piri chicken taco recipe. Serve with barbecued corn, avocado and sour cream for a fresh, fast dinner that's ready in 15 minutes

  • 2 corn cobs
  • 1/2 rotisserie chicken, shredded
  • 1/4 cup piri piri sauce, plus extra to serve
  • 12 taco shells
  • 50 gram rocket leaves
  • 2 tomatoes, chopped
  • 1 avocado, chopped
  • sour cream to serve

    Heat oven to 180°C. Char-grill cobs on a barbecue for 4-5 minutes, turning on all sides. Once cool, slice kernels from cobs. Toss chicken with piri piri sauce. Heat taco shells for 5 minutes in oven.

    Fill each shell with rocket, tomato, avocado, chicken mixture and corn. Dollop with sour cream and extra piri piri sauce to serve.
