Method
1.Place sugar and 2 tablespoons of water in a small saucepan. Heat on low, stirring, until sugar dissolves. Increase heat to medium. Boil for 1-2 minutes, until syrupy. Set aside to cool.
2.Place pineapple and jalapeno in a medium bowl. Press firmly with muddler or pestle until mashed or blend, in batches, until smooth.
3.Transfer to a large jug. Add tequila, lime juice, Cointreau, ice and cooled syrup. Stir to combine. Strain into large glass jug.
4.Half-fill 6 serving glasses with extra ice. Pour over margarita mixture to serve. Garnish with skewers of chilli.
