Ingredients

Pine nut and dried fig couscous
  • 1 cup (250ml) chicken stock
  • 1 cup (200g) couscous
  • 2/3 cup (130g) coarsely chopped dried figs
  • 1/2 cup (80g) pine nuts, roasted
  • 2 teaspoon finely grated lemon rind
  • 1/4 cup (60ml) lemon juice
  • 1/4 cup finely chopped fresh flat-leaf parsley

    Bring stock to the boil in medium saucepan. Remove from heat, add couscous, cover; stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally.

    Stir remaining ingredients into couscous; season to taste.
