Pesto beef burgers
  • 500 gram lean beef mince
  • 1 small onion, finely chopped
  • 1/2 cup grated parmesan, plus extra slices to serve
  • 1/3 cup basil pesto, plus 1/2 cup extra to serve
  • 1/3 cup mixed fresh herbs, (basil, parsley, chives) chopped
  • 1 beaten egg
  • 2 tablespoon oil
  • bread rolls, sliced tomato rocket leaves, to serve

    In a large bowl, combine mince, onion, parmesan, pesto, herbs and egg. Season to taste. Shape into 4 even-sized, flattened patties. Chill on tray for 5 minutes.

    Heat oil in a large frying pan on medium. Cook patties 4-5 minutes each side, until golden brown and cooked through. Drain on paper towel.

    To serve, spreads rolls or thickly sliced bread with half extra pesto. Top each with tomato, rocket, patty, extra cheese and remaining pesto.
