Method
1.Preheat oven to 220°C. Oil an oven tray.
2.Boil, steam or microwave potato 5 minutes, then drain. Pat dry with absorbent paper allow to cool for 10 minutes.
3.Rake rounded side of potatoes gently with tines of fork. Place potatoes on the tray, in a single layer, cut-side down. Brush with oil.
4.Roast potatoes about 50 minutes or until browned lightly and crisp.
Starchy potatoes, such as pontiac or lasoda, are best for this recipe.
