Perfect roast potatoes
  • 2.5 kilogram medium potatoes, halved lengthways
  • 1/3 cup (80ml) olive oil

    Preheat oven to 220°C. Oil an oven tray.

    Boil, steam or microwave potato 5 minutes, then drain. Pat dry with absorbent paper allow to cool for 10 minutes.

    Rake rounded side of potatoes gently with tines of fork. Place potatoes on the tray, in a single layer, cut-side down. Brush with oil.

    Roast potatoes about 50 minutes or until browned lightly and crisp.


Starchy potatoes, such as pontiac or lasoda, are best for this recipe.
