Peppered pork and cabbage with apple salsa

Ingredients
Peppered pork and cabbage
- 2 tablespoon olive oil
- 4 100g pork leg steaks
- 1 tablespoon ground black pepper
- 1/4 red cabbage, shredded
- 1/3 cup chicken stock or white wine
- 1 tablespoon lemon juice
- 1 bunch broccolini, trimmed, halved
Apple salsa
- 1 green apple, finely chopped
- 2 tablespoon lemon juice
- 1 long red chilli, seeded, finely chopped
Method
Peppered pork and cabbage with apple salsa
- 1In a large frying pan, heat half oil on high.
- 2Sprinkle pork with pepper. Cook 3 minutes one side. Turn; cook a further 2 minutes. Transfer to a plate; cover with foil to rest.
- 3In same pan, heat remaining oil on medium. Saute cabbage 1 minute. Add stock or wine and juice; simmer 3-4 minutes, stirring, until cabbage is tender.
- 4Mix broccolini into cabbage. Cook, covered, a further 2 minutes, until broccolini is just tender. Season to taste.
- 5To make apple salsa, in a bowl, mix all ingredients together. Season to taste.
- 6Serve pork on a bed of vegetables, topped with apple salsa.
