Penne with pesto, chicken and sun-dried tomatoes
- 375 gram (12 ounces) penne pasta
- 340 gram (11 ounces) bottled semi-dried tomatoes in oil
- 1/3 cup (90g) bottled pesto
- 2 cup (320g)shredded barbecued chicken
Method
Penne with pesto, chicken and sun-dried tomatoes
- 1Cook pasta in large saucepan of boiling water until tender; drain, reserving 1/3 cup of the cooking liquid.
- 2Meanwhile, drain tomatoes, reserve 2 tablespoons oil.
- 3Return pasta to pan with pesto, chicken, tomatoes, reserved oil and liquid. Stir gently until heated through.
Notes
Top with grated parmesan cheese, if you like.
