Ingredients
Pecan and ginger slice
- 125 gram butter, chopped, plus 60g extra
- 1/2 cup caster sugar
- 1 egg yolk
- 1 cup plain flour
- 2 tablespoon custard powder
- 1 teaspoon ground ginger
- 395 gram can condensed milk
- 1/2 cup brown sugar
- 2 tablespoon golden syrup
- 125 gram pecan halves
- icing sugar, to dust
Method
Pecan and ginger slice
- 1Preheat oven to moderate, 180°C. Lightly grease and line a 20cm x 30cm slice pan.
- 2In a large bowl, using an electric mixer, beat butter and sugar together until light and creamy. Beat in yolk. Sift flour, custard powder and ginger together, then fold into creamed mixture to form a soft dough.
- 3Press dough over base of pan (see Notes). Bake for 12-15 minutes, until lightly golden.
- 4Meanwhile, in a medium saucepan, combine condensed milk, extra butter, brown sugar and golden syrup. Stir over a medium heat for 5-6 minutes, until golden and thick.
- 5Spread over base. Top evenly with pecans, pressing into surface. Bake for 12-15 minutes, until firm and golden. Allow to cool. Slice into fingers. Dust with icing sugar to serve.
Notes
Use floured fingertips to press the dough over the base of the slice pan. This prevents sticking. MAKES 16
