- 2 1/4 cup fresh shelled peas until just tender; drain.
- 40 gram (1½ ounce) softened butter,
- 1 tablespoon finely chopped fresh mint
- 1 teaspoon finely grated lemon rind
Method
Peas & mint butter
- 1Boil, steam or microwave 2¼ cups fresh shelled peas until just tender; drain. Meanwhile, combine 40g (1½ ounce) softened butter, 1 tablespoon finely chopped fresh mint and 1 teaspoon finely grated lemon rind in a small bowl. Serve peas topped with butter mixture. serving suggestion Serve with roast pork or chicken.
Notes
You can use frozen peas in this recipe if you prefer.
