Pearl couscous with capsicum, red onion and pine nuts

  • 400 gram packet frozen Birds Eye SteamFresh Plus Pearl Couscous with Chick Peas
  • 2 tablespoon olive oil
  • 1 tablespoon white balsamic condiment or white wine vinegar
  • 1 tablespoon honey
  • 3/4 cup chargrilled red capsicum, cut into thick strips
  • 1 small red onion, thinly sliced
  • 1 tablespoon toasted pine nuts
  • baby basil leaves, for garnish

    Cook Birds Eye Pearl Couscous with Chick Peas following packet directions.

    Meanwhile combine oil, white balsamic condiment and honey to make a dressing. Season to taste.

    Drizzle dressing over Birds Eye Pearl Couscous with Chick Peas. Toss gently to combine in a large serving bowl.

    Garnish with capsicum, onion, pine nuts and basil. Serve immediately.
