Pearl couscous with capsicum, red onion and pine nuts

Ingredients
- 400 gram packet frozen Birds Eye SteamFresh Plus Pearl Couscous with Chick Peas
- 2 tablespoon olive oil
- 1 tablespoon white balsamic condiment or white wine vinegar
- 1 tablespoon honey
- 3/4 cup chargrilled red capsicum, cut into thick strips
- 1 small red onion, thinly sliced
- 1 tablespoon toasted pine nuts
- baby basil leaves, for garnish
Method
- 1Cook Birds Eye Pearl Couscous with Chick Peas following packet directions.
- 2Meanwhile combine oil, white balsamic condiment and honey to make a dressing. Season to taste.
- 3Drizzle dressing over Birds Eye Pearl Couscous with Chick Peas. Toss gently to combine in a large serving bowl.
- 4Garnish with capsicum, onion, pine nuts and basil. Serve immediately.
