Pear, chocolate and ginger loaf

This gorgeous recipe sees juicy pears, sweet chocolate and crystallised ginger come together in a delicious loaf. Dust with cinnamon sugar and serve warm, cold or toasted

Method

1.Preheat oven to 200°C. Grease and line a loaf tin.
2.In a large bowl, combine the flour, baking powder, sugar, spices and salt. In another bowl, combine the chopped pear, crystalised ginger and chocolate, and set aside.
3.Whisk together the yoghurt, eggs and vanilla.
4.Fold the yoghurt mixture into the dry ingredients until just mixed. Spread ⅓ of the batter in the loaf tin and scatter over ½ the chopped pear and chocolate mixture. Add another layer of batter, repeat with the pear mixture and cover with a final layer of batter.
5.Arrange the fanned pear quarters on top. Mix together the sugar and cinnamon and dust the loaf. Bake for 50 minutes or until cooked. Serve warm, cold or toasted.
  • Makes 1 large loaf. – To slice the pear quarters into fans, use a sharp knife and cut thin slices, keeping the piece joined at one end. – To line a loaf tin, cut a strip of baking paper long enough to extend over both long sides of the tin.
