Pear and almond cake
  • 125 gram butter, melted and cooled
  • 3/4 cup brown sugar
  • 2 large unpeeled pears, coarsely grated
  • 1 large egg, lightly beaten
  • 1 cup raisings
  • 1/2 cup chopped almonds
  • 2 cup flour, sifted
  • 1 teaspoon baking soda
  • 1 teaspoon mixed spice
  • 2 teaspoon cinnamon
  • pinch salt
  • icing sugar, to dust

    Heat oven to 160C fan bake. Grease a 24cm springform cake tin and line the base with non-stick baking paper.

    Place melted butter, sugar, grated pear, egg, raisins and almonds in a large bowl and stir to combine.

    Add sifted flour, baking soda, spices and salt. Stir gently to just combine. Spread mixture into prepared tin. Smooth the surface.

    Bake for 60 to 70 minutes or until a skewer inserted comes out moist but clean. Remove to cool in the tin before turning out. Dust with icing sugar to serve.
