  • 375 gram packet rice stick noodles
  • 2 tablespoon peanut oil
  • 750 gram beef stir-fry strips
  • chinese broccoli (gai lan)
  • 1 bunch broccolini, halved
  • 1 onion, thinly sliced
  • beansprouts, to serve
  • chopped peanut, to serve
  • 1/2 cup crunchy peanut butter
  • 1/2 cup warm water
  • 2 tablespoon kecap manis
  • 1 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon sambal oelek

    Place noodles in a heatproof bowl and cover with hot water. Soak until they soften, gently separating. Drain well and set aside.

    Meanwhile, heat half oil in a wok or large frying pan on high. Stir-fry beef in two batches, 3-4 minutes each, until well browned. Set aside. Heat remaining oil in wok. Stir-fry broccoli and onion 2-3 minutes, until just tender.

    To make peanut sauce, mix all ingredients together in a large jug until smooth.

    Return beef to wok with sauce mixture. Bring to simmer and cook 2 minutes. Add noodles and tossing well, until hot. Serve topped with bean sprouts and peanuts.
