Peanut butter cookies
These delicious gluten-free peanut butter cookies are perfect for the whole family to enjoy for a mouth-watering morning or afternoon tea treat

Ingredients
- 125 gram softened butter
- 1 cup crunchy peanut butter
- 1 cup dark brown sugar
- 2 tablespoon golden syrup
- 1 egg
- 1 teaspoon vanilla essence
- 1 cup gluten-free flour
- 1/2 teaspoon sea salt flakes
- 200 gram gluten-free dark chocolate, roughly chopped
- 1/2 cup roasted unsalted peanuts, roughly chopped
Method
- 1Preheat oven to 180°C. Lightly grease and line two oven trays with baking paper.
- 2In a bowl, using an electric mixer, beat butter, peanut butter, sugar, golden syrup, egg and vanilla on medium for 3-4 minutes until light and creamy.
- 3Sift flour and salt flakes together into mixture. Beat on low for 1 minute until combined, then stir chocolate and peanuts through.
- 4Roll tablespoons of mixture into balls and arrange on trays 2cm apart, pressing slightly to flatten. Bake for 15-20 minutes until biscuits are golden.
- 5Leave to cool on trays for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can store these cookies in an airtight container for up to 5 days.
