Peanut butter cookies

These delicious gluten-free peanut butter cookies are perfect for the whole family to enjoy for a mouth-watering morning or afternoon tea treat

  • 125 gram softened butter
  • 1 cup crunchy peanut butter
  • 1 cup dark brown sugar
  • 2 tablespoon golden syrup
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 cup gluten-free flour
  • 1/2 teaspoon sea salt flakes
  • 200 gram gluten-free dark chocolate, roughly chopped
  • 1/2 cup roasted unsalted peanuts, roughly chopped

    Preheat oven to 180°C. Lightly grease and line two oven trays with baking paper.

    In a bowl, using an electric mixer, beat butter, peanut butter, sugar, golden syrup, egg and vanilla on medium for 3-4 minutes until light and creamy.

    Sift flour and salt flakes together into mixture. Beat on low for 1 minute until combined, then stir chocolate and peanuts through.

    Roll tablespoons of mixture into balls and arrange on trays 2cm apart, pressing slightly to flatten. Bake for 15-20 minutes until biscuits are golden.

    Leave to cool on trays for 5 minutes, then transfer to a wire rack to cool completely.
