Peanut butter chocolate chip cookies

Peanut butter chocolate chip cookies
- 175 gram butter, at room temperature
- 1/3 cup smooth peanut butter
- 2/3 cup firmly packed brown sugar
- 2/3 cup caster sugar
- 2 teaspoon vanilla essence
- 2 eggs
- 2 1/2 cup plain flour
- 1 teaspoon bicarbonate of soda
- 1 cup dark chocolate bits
- 2/3 cup unsalted peanuts, coarsely chopped
Method
Peanut butter chocolate chip cookies
- 1Preheat oven to 180°C (160°C fan-forced). Line 2 baking trays with baking paper.
- 2Using an electric mixer, beat butter, peanut butter, brown sugar, caster sugar and essence in a medium bowl, until pale and creamy. Add eggs. Beat until combined. Sift flour and bicarbonate of soda over butter mixture. Using a wooden spoon, stir to combine. Stir in chocolate bits and peanuts.
- 3Drop level tablespoons of dough on prepared trays. Bake 12 minutes, or until light golden. Cool on trays 5 minutes. Transfer to a wire rack to cool completely.
Notes
Try using pecans, chopped raisins or a combination of both instead of chocolate bits.
