Method
1.Preheat oven to 180°C (160°C fan-forced). Line 2 baking trays with baking paper.
2.Using an electric mixer, beat butter, peanut butter, brown sugar, caster sugar and essence in a medium bowl, until pale and creamy. Add eggs. Beat until combined. Sift flour and bicarbonate of soda over butter mixture. Using a wooden spoon, stir to combine. Stir in chocolate bits and peanuts.
3.Drop level tablespoons of dough on prepared trays. Bake 12 minutes, or until light golden. Cool on trays 5 minutes. Transfer to a wire rack to cool completely.
Try using pecans, chopped raisins or a combination of both instead of chocolate bits.
