Peanut butter chocolate chip cookies
  • 175 gram butter, at room temperature
  • 1/3 cup smooth peanut butter
  • 2/3 cup firmly packed brown sugar
  • 2/3 cup caster sugar
  • 2 teaspoon vanilla essence
  • 2 eggs
  • 2 1/2 cup plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 cup dark chocolate bits
  • 2/3 cup unsalted peanuts, coarsely chopped

    Preheat oven to 180°C (160°C fan-forced). Line 2 baking trays with baking paper.

    Using an electric mixer, beat butter, peanut butter, brown sugar, caster sugar and essence in a medium bowl, until pale and creamy. Add eggs. Beat until combined. Sift flour and bicarbonate of soda over butter mixture. Using a wooden spoon, stir to combine. Stir in chocolate bits and peanuts.

    Drop level tablespoons of dough on prepared trays. Bake 12 minutes, or until light golden. Cool on trays 5 minutes. Transfer to a wire rack to cool completely.


Try using pecans, chopped raisins or a combination of both instead of chocolate bits.
