Peanut and honey ice-cream sandwiches

Peanut and honey ice-cream sandwiches
- 8 digestive biscuits (120g)
- 1 cup vanilla ice-cream, softened slightly
- 1 small banana (130g), sliced thinly
- 1/4 cup (70g) crunchy peanut butter
- 1 tablespoon honey
- 2/3 cup (90g) chopped salted, roasted peanuts
Method
Peanut and honey ice-cream sandwiches
- 1Line an oven tray with baking paper. Place 4 biscuits on the tray. Working quickly, place an egg ring on top of a biscuit and fill with ¼ cup of the ice-cream. Repeat with remaining 3 biscuits and ice-cream; carefully remove egg rings. Top the ice-cream with banana; place in the freezer.
- 2Meanwhile, combine peanut butter and honey in a small bowl; spread the remaining 4 biscuits with peanut butter mixture. Place biscuits, peanut butter-side down, on top of ice-cream and banana to sandwich. Roll the edges in the chopped peanuts. Freeze for 10 minutes or until firm.
Notes
You can assemble the ice-cream sandwiches up to a day ahead and store, covered, in the freezer.
